Airfryer Butternut Squash and Chicken

Doing Everything in one Pot –

Here are the details:

Cut up butternut squash into equal squares (or buy it that way).
Mix in a bowl with:
Extra Virgin Olive Oil
Salt
then add the spices you like- for me I added these two:

Za’atar and Sumac.  You can get them from fine cooking stores- or order from Amazon or some spice seller like Spice Islands

You could just stop at salt.

Put this in the airfryer for 5 minutes at 400 degrees.
While that is working take a boneless chicken breast with skin on
Season with salt and pepper and then the same spices you used.

Once the butternut squash has gone five minutes add the chicken on top of the vegetables

Cook for 15 minutes at 400 degrees and check the temperature of the chicken. If it is under 150 degrees leave it in for another few minutes. Take it out if the inside temperature of the chicken is 149 or more. If it is over 165 it will a bit chewy (too dry). So having a good instant read themometer is essential to this.

For my patients who have the Lap-Band I recommend doing the chicken by Sous Vide Method.

Serve.
